Absotively posolutely correct that there is the optimal tool for the task in most scenarios I have a 2017 Touareg and a 2000 996.
The Touareg is not exactly fun to drive, but it's a much, much better car for covering big distances in than the Porsche. It's super quiet, super comfortable, and you can do 500 miles plus in it and get out feeling fresh. Although the 996 is probably decent for a car of its ilk, you'd never call it refined, and my back knows when I've done a couple of hundred miles in it.
On the other hand, a thrash in the Porsche is rewarding in a way the Touareg could never be.
Trouble is it can be hard to find yourself in precisely the right one all the time, with few exceptions (e.g. and E46 M3 touring maybe - even that not being sports car really). I've had a two and even a three car solution and find the idea nicer than the reality as I have experienced it (storage complications; multiple sets of bills; resenting being in “that one” rather than “the other”; feeling guilty about neglecting to use them more etc.). Ultimately I'd of course love to have a vast and eclectic selection of cars but without the time and budget to manage that, I am settling into the idea of “one car that I like more than dislike for my main uses” (getting around, having fun doing it etc.). It will be a compromise but ultimately less stressful and financially draining I think. Ask me when I’ve been relegated to a small (good), boring (not good) hatchback (not a sports car but practical enough) for another stint
There is also a question of expectations / taste / tolerance - for example, I personally would tolerate a 996 for all on-road purposes other than those requiring 18in ground clearance, a flatbed and a winch (and even then...). Provided I could afford to run it (which I can't right now, despite doing about 6k miles a year) I'd be happy with that as a compromise. One front row seat plus room for coats / other flotsam on the back seat (or even spare friends / mechanics for shorter journeys).

I've still got my 1:18 Bburago F40, very excitedly purchased c.1989. Rear screen still showing some signs from when it took a hit from a tennis ball. Other than that I suspect its build quality might show a real F40 up
No longer have my 1:1 E30 iS though. Was fun, but preferred the 2.5L overall due to much nicer engine note and a leccy roof

I've owned the 996 for 10 years, and for most of that time I had a company car as well. But gave that up and took the cash 2 years ago when my wife moved to the US with work... and the 996 was my only car for 2 years.It coped well enough for just me - could get my golf clubs and trolley in it and all my fishing gear, but I did have to get a man with a van in to clear the garden rubbish!
They are decently practical.
I've largely done the same.
The wife's Touareg is the car of choice for family trips, long and short. Its quiet, comfy and practical. If dull as dishwater. I'd have another in a flash.
The M3 on the other hand gives me the enjoyment and engagement when I want (largely aided by the carbon airbox and other mods) but is quiet (with the stock exhaust), comfy and sufficiently practical (boot and folding seats) when needed to do the tip run, Tesco run, nursery run etc. A bit like the 996, its a really good do-it-all without being stupendous at anything.
The 355 quietly sits there and gathers dust. But for the odd weekend away with the Mrs or early morning blast around, its fking ace.
The only change I might consider at some point would be swapping the M3 for an M5 as the kids get bigger.
Other than that, I'm very lucky to be perfectly happy with my 3 car solution.
