Options are
reject the car, get deposit back
accept the car enjoy it even though its the wrong kind of grey
accept the car, sell it for a profit, blow it on coke and hookers. or a version in the right colour...

If it was a dealer mistake, then they won't.In 99.9% of cases, there is only a B2B relationship between dealer and manufacturer.
I thought you said they're not building any more cars? If that's the case, you're a bit stuffed really. Taking the car and living with the pain of not having it your exact spec (not sure if I could do that given the numbers you're suggesting) or walking away seem to be your only options.

While I'm not a fan either of wrapping, could you perhaps persuade the dealer to wear the cost of a professional wrap @ CIRCA £1700 and then if/when you ready to sell you have lovely fresh paint underneath and a car worth a lot more than you paying for it.. win/win ?. I too would certainly be less than impressed , however on a limited run model and with the price they are trading hands at, I reckon dealer will just refund you and shift it too one of the many on the waiting list.

I have a lot of sympathy here for the OP. Clearly a chap who buys cars with his heart first, and this has taken the gloss of what is a massively emotive purchase. It might be a minor difference for some but if it's something you have saved for and spent hours agonising over every detail it's just not the same.

This really is a terrible situation.
You mentioned the finish on the roof was not right? Surely if that is the case then they need to re finish the car anyway? I would not just accept that the whole paint finish is going to be okay if they messed up one part of it. It is not a huge leap to say the rest of the workmanship may not be up to scratch.
On a limited edition car that is also an investment you really want things like the finish to be perfect.
Can you check the VIN and decode what paint code it was supposed to built with?
Sadly i think any outcome is going to take the shine off your new purchase (no pun intended). Try not to let it ruin the experience for you.

I had a very similar thing happen, and while it was on a much cheaper car it was incredibly frustrating.
We ordered a new 2014 Defender 90 over here in Australia back in about Oct/Nov 2013. At the time the dealer hadn't been sent the 2014 MY brochure or order sheet by LR as they hadn't released them I believe despite them being available to order.
As LR made very few changes normally we did the order from the forms they had. This was a fairly basic order. Just a 2014 Australian Spec station wagon in Loire blue with specific wheels and mud tyres.
About 3 months later just after the car was built LR released the order sheets which I downloaded to find that they had changed the way the colour was ordered so you had to specify body, roof and wheel arch colours seperately.
I spoke to LR customer service in the UK and the dealer here to find that the car had been built with a white roof and black plastic arches.
I wasn't overly happy and I wasnt the only customer over here affected.
The dealer was all set up to repaint the roof and arches once it landed at their bodyshop (JLR, BMW, mini) however when it turned up it had been done.
It appears LR Australia grabbed it when it landed, and repainted the wrong parts before it ever got to my dealer.
They did a very good job, although its irrelevant now as the roof has been repainted again since under warranty this time by the dealers body shop due to corrosion around the roof windows (due to LR missing some sort of paint process apparently.... - useless!)
So in short mine was sorted, and LR Aus and the dealer here were both excellent, and the car arrived on time in the right colour. It had done about 95km instead of 10 however.
I would have thought repainting the roof wouldn't be that hard
