If I'd be be billionaire, I'd have a hangar wit 20-50 cars, with several classic undergoing restoration and always on the look for what fancies me next. (Searching, buying and then restoring is as much fun as driving.) That would be a Fantasy Garage.
While my choice comes across as somehow mundane, I'd be more than happy with the one I stated before!
BTW, without counting, the Singer Porsche 911 seems to be the most named car, followed by a modern 911 and a Range Rover (exactly what I have chosen as well....)
1. Mercedes Marco Polo AMG Line. Perfect day van and occasional camper while still being small enough to use as a family car too. It'll do Ikea trips, tip runs, the shopping run, etc.
2. Singer 911. My dream car.
3. BMW X5 M50i. Mrs Toon's daily driver that I would borrow a lot. She only likes SUV's and these things do most things pretty well. 4x4 practicality, higher ground clearance for parking up in the country (I like to hike), big boot, etc. It's a great thing for luxury, comfort, practicality and general daily use. I wouldn't go with the M version as these things are not meant for track work. The point of them is the comfort over harsh ride and stiff suspension.
4. Porsche 911 (997.2) GT3. I'd need something special to attack a B road when in need of a bit of weekend escapism.
5. MK 1 Ford Escort RS Mexico. Classic. It can't all be German! Something I can take to shows and I've wanted one since I was a kid.

This is an interesting topic becuase I think 5 cars is really the max no. of cars where you can use each of them frequently. It's also the min no. of cars where you can have some really specialised cars.
Today my list from the perspective of a family man who loves VALUE is:
1. RR 4.4 V8 TD. L322 because it has a classic look, massive support. I think it's better in many ways than a classic Land Cruiser. Will be used in the winter and for towing duties. Would also use it for motorway journeys. For £10k for an L322 vs £40k for an L405, I would use it without care, as intended.

Just off the top of my head. First thing I'd do is break the OP's rules and move the hell out of London to the Cotswolds
1. Mercedes G63 AMG - daily driver. I don't care, I think they're superb. If I needed more room it'd be a new Range Rover, if I needed more country-ness it'd be a new Defender 110. But I don't, so it's not.
2. Porsche Carrera GT - super / hyper / dream car. Ultimate fantasy would be a McLaren F1 or maybe a Zonda, but the former are 10 times the price and even with Euromillions money that'd be too much for me to want to actually drive. Close contender was an F40, and I think I'd maybe tick that box first before a CGT which would be a keeper.
3. Porsche 911 (Singer) - retromod thing. Ideally made for me, but I think they've stopped the 'regular' car now. There's about a dozen classic 911's I could pick but ultimately you can only drive one car at a time, and I think the Singer is just an incredibly crafted vision of a classic 911.
4. VW Polo G40 - oddball / cult classic. So many better (on paper) alternatives than this, but my first car was a '93 Polo coupe, so I've always loved the G40. This would be a nut & bolt resto, with a few upgrades and mods (subframe conversion, better suspension and brakes, upgraded 'charger, LSD, some nice period wheels...)
5. Triumph Street Triple - bike. You have to have a bike. I'm a big Triumph fan, and have had my Daytona 675R for around 8 years. If I had to have one bike in a collection though, it'd be a sport naked, as they are just more useable, and I honestly think 120-130bhp is plenty to exploit on UK roads, as awesome as 200bhp+ 'super nakeds' may be.

2: Aerial Nomad for razzing around my estate and the local country roads
3: Ferrari F40 because it's a Ferrari F40 and I don't generally like modern supercars
4: Caterham 620R for trackdays and mental fast fun. The nomad could fill this role though so could potentially swap this for something different.
5: Difficult this one. Either an RS6 Avant or a Mitsubishi Evo 6 RS450 extreme. Very different cars and I think the silly side is covered so probably the RS6.
