I think part of the issue is i cant utilise all the power on the roads near me, i literally get to everywhere i need to go on 30/40 roads and dual carriageway. So you've bought a nippy car, with decent handling but dont like driving for fun is the short version?
Either chop it in for a 1.0 ecoboost if you rather the money in the bank, or keep it and look after it, I'm sure in a few years it'll not loose a huge amount with low miles on it come sale time, plus you might find some enjoyment from it along the way.

This is a slippery slope OP but I can understand the mentality.
You've paid a fair chunk of money, it's new or nearly new, it's fresh, unmarked so you want to take care of it. I'm the same, I hate leaving my cars with a garage, I only wash them myself, I don't like leaving them parked in any old place etc. To the point where I've ended up with three cars which I'm stupidly precious about.
All I would say is, if it's you're only car and for daily use, tell yourself it can't stay perfect but you can look after it better than most cars. Still park it carefully, wash it yourself, instruct the garage to not wash it etc when you have it serviced.

My biggest mistake ever was selling my Impreza WRX hatch, I loved that car but at the time money was tight , 22mpg and £500 tax was wearing a bit thinso it went, I got a good price for it so depreciation was zero in the 2 years I had it
since then things have improved, the golf 1.2 I bought the week after lasted a month before I couldn't stand it anymore but Mrs wack liked not putting £50 a week in it , so I bought a skoda yeti which I liked but a car with 100k on just worried me, so I spent a lot on a B Class 220CDi which ticks all the boxes especially the Mrs wack box
But I hate driving it, and all the points in the OPs first post apply
