So what is the "ultimate colour combination?"

The best combination to me is a dark exterior / pale interior or vice versa. As for colours, looking back at all the cars I've owned, most have been black, white or silver (guess which manufacturing group they were from) with an occasional red or blue one.
I don't like brown, green - there's enough 'nature' out there without having to drive or sit in it (or wear it!) so tan leather is a definite no-no. Probably my "ultimate colour combination" would be a dark blue exterior with a pale grey interior though I've never owned a car with it.

Silver with black leather
Titanium Grey with red leather
Silver with blue leather
Orange with black Leather
I prefer the Blue leather, but the colour of the leather needs to be seen in the context of the fit / finish and interior style.

And strangely, its a colour that is very rarely offered by any manufacturer these days, (used to be common offering by Porsche and BMW) yet its a very practical colour choice with many of the bland colour choices offered by them (silvers, greys, whites etc) which would give options to the endless black or ivory/white offerings that they seem intent of offering.There is plenty of science that suggests personality is reflected in car colour choice and car colour is linked to driving style and safety.
Conservative colours such as silver and grey are the safest, while flashy colours attract flash people that like to stand out from the crowd.

Last few cars have been black, black, silver, gunmetal grey. Next one will be bright blue.
If you were to remove all black, white, silver and grey cars from the roads there'd be almost nothing left. Very homogeneous out there right now.
I love a dark tan interior. Yesterday played around with a configurator to get a mix of dark tan and black highlights. It looked so good i had to lie down for a bit. But it would have required a careful choice of exterior colour to go with it.

Jag mk2 in grey metallic with oxblood leather , chrome wires is top of my lottery list .
My Audi coupe in red with black leather was admired by many and did look good all polished up .
What looks gash to some is the perfect choice for others .
I have a soft spot for Fiat Punto sportings in yellow .
I also chased an Audi 80 cabriolet in peppermint green with grey interior but missed it buy an hour .I don't normally like green .

Back in 1972, my mate's father had that exact combination on his 3.8.Of course, back then, they were relatively cheap and, at the beginning of the poptastic 70s, grey had long gone out of fashion, in favour of bright colours, albeit the XJ6 came in more sober shades of red, yellow and heather.
For me definitely a light interior, I'm a huge fan of the grey and red cloth in my Fabia and my dad's Evoque is a sort of dark grey and cream two tone leather. Both have a panoramic glass roof each to flood the cabin with light. I find most dark interiors gloomy personally.
As for exterior, I'm not a fan of white and black wouldn't be my first choice. I like blues and reds but also have a soft spot for yellow and orange. I like quite deep, rich colours as I feel they show up well when clean - dad's Evoque is Loire Blue which is a dark navy colour but looks much brighter in the sun, it's a lovely shade.
