Not going to mention visits to Goodwood, Brooklands etc, but stuff I've seen in the wild over the years, mostly around Berkshire & Hampshire:

Black Enzo going the other way on the A303.
White Countach QV giving it beans past Middle Wallop.
Overtaken by a red F40 in Newbury.
Red 288GTO, Wiesmann Roadster, Zonda, Ultima Spyder, Spyker Aileron, DB5 and a GT40 at various times on the A34.
Bugatti EB110, Alfa 8C getting their shopping in Newbury Tesco.
Original NSX power-oversteering off a roundabout in Theale.
Ferrari 250 GT getting petrol at the garage opposite my house! Thruxton was 2 miles away....
Some utterly mad '50s single-seater racer on the public road near Fareham with driver sawing frantically at the wheel mid-corner.

Now I'm in Lincolnshire I just see the odd tractor.

I've also seen a Wiesmann Roadster but it was in Düsseldorf. I'm pretty sure I have a photo somewhere, taken on a candy bar phone.

I saw a Bentley Supersport Ice Speed Racer yesterday. They only made 100 and most of them are abroad.

Having racked my brains over a few days I would guess the rarest car I ever saw was a replica, although admittedly a very, very incredibly good one. It was the Tom Wheatcroft commissioned Bugatti Royale Coupe Napoleon; it was in a showroom as a favour and although not allowed to sit in it I spent a good hour with the staff poring over the incredible details and sheer size of it.

When a real Bugatti Royale required a replacement piston a few years later they went to the company that had made this replica, so exacting was their work.
