Also if you have stopped making payments on the £7k finance agreement and paying the finance payments on £11k rather than £18k youd better sort it quick as you owe the finance companies money rather than anyone owing you.

Op, just walk through this .. in person and ask for the finance manager

Tell them what happened and get them to resolve it

What are you suggesting? That if you have a problem you must go and be physically in front of another human? talking? face to face? an email or a text won't do?

No I agree, OP needs to go, in person, and explain whats happened. The solution is simple; they just re-arrange the correct finance for you and agree to pay your outstanding on the old car.

I know emails and things leave a communication trail which can be useful in a "he-said, she-said" ruckus but you often can't beat just going to see the person you need to see, physically, to get something sorted.

They have gave back 11k back to the finance company they took first finance.

Now I'm only left with paying for my old car ( don't want to get in trouble for not paying and letting That affect my credit rating) and my new car not being paid for, done hpi check and only stocking finance is on the car " for 4 months "

Unsure where I'm standing at in this situation.

What I'm entitled to in this situation?

Why would you think youre entitled to something??
Just go to the dealership, explain the situation if the original sales cabbage isnt there, sign the new paperwork job done.
Either that or just bury your head in the sand and wait for a CCJ/ debt collection gorilla to land on your doorstep and take the car or your belongings/house away..easy really..
