It's probably to have the right bit of kit. I had a Samsung Galaxy Note phone, then the Tab S7 and Tab S8 Ultra tablets, they all have a stylus and handwriting recognition that made typing on the go really easy. If you have a voice recording you can transcribe that into Word etc, then spend the time ready and correcting with a stylus and it should be quite efficient.

I used to record most of my lectures. Listening back was usually torture. Quite quickly I learnt to put time-references in the margins of my written notes which referred to the important bit of the recordings. That in combination with carefully saving all recordings with appropriate names which matched the written notes was a game-changer. Being able to re-listen to an important concept or something which didn't sink in during the lecture was incredibly useful.
