I have been looking at Seat Leon Cupra`s and the Cupra R.

The Cupra R looks nicer, does it have different bumpers or is it just the spliter and wheels?

Also is there one in the middle between the basic cupra & the R

Also are the normal Cupra`s 180bhp and the cupra r 210bhp / 225bhp?

Probably better luck on the VAG section, as far as I know they have slightly different body kit. The main differences are the state of engine tune yes, the earlier R's being 210 and the later being 225. Same BAM engine and the Audi TT.

They are supposed to be pretty good value for performance really.

Do you mean mk1 leon ? up until about 54 plate?

If so the r is quite different - brembo 4 pots, different interior, suspension, wheels and obviously the bodywork.

All cupras are 180hp, early (pre 53 plate) r is 210hp, later is 225. You can tell the difference between early and late r cars as the "cupra" badge is infilled with red, early ones are black. Steering wheel on late ones has a band through it at 12 o clock. Early cars had square shaped mirrors, later ones a sort of teardrop shape - don't rely on this alone though as some late 210hp cars had the teardrops.
Not totally sure on the late R but the early ones had a couple of options:
Sat Nav
Recaro Seats

Far as colours go you had black, red, yellow. There was a run of "platinum" cars (dark met grey) in 2003, this became a standard colour option on the 225 cars, there was a silver too. All cars are well equipped - CD changer in glovebox, climate control, electric mirrors/windows etc.

Very early cupras don't look that different from a "boggo" model, later ones (02 plate on I think ?) had much nicer bumpers etc. If I remember rightly the cupra had lots more options - auto dimming mirrors and the like that oddly you couldn't get on the R.

The r has many suspension changes, thicker anti roll bars etc. The r is probably the best handling vag car using that platform. The standard cupra has more in common with the mk4 golf gti t. Bit fat, bit soggy, bit slow. Satisfying car to modify. Best to go for the r in the first place, bigger turbo, better brakes, better suspention. Either the 210 or 225.
