I don't think £500 will go very far. The fitting kit (look for Euro Motor Speed on eBay and you will need to contact them for details of your PCM/Bose, etc) is north of £100 and fitting will be similar unless you are happy to do the work yourself.
Head unit wise, I am happy with my Kenwood and again you can get previous models at sensible prices on eBay as the functionality does not change much and they are all software upgradable.
If you stick to Kenwood, Pioneer or Sony you won't go far wrong.

In which case, cheapest may be to replace with another PCM head unit from eBay
