Speak to Tyrone at Riviera Autobody, he’s well known in Porsche circles and does an excellent job, he’s doing my friends 355 soon and has quoted a decent price. They are pretty local to you too.

Personally if you want to have it done well it has to go back to the metal everywhere to rule out any issues which may not have surfaced. I had this done on a Porsche 930 by a good Porsche specialist and it cost £20k. Also I wouldn't touch anyone who doesn't know Ferraris, a 'good' bodyshop may not be upto the job. It will be expensive but saving money is a false economy on these cars.

The best is the red factory cover. Soft, and will not scratch, and will keep dust off your paint.

I'm just having my 1967 Abarth 595 bare metal resprayed and, including thermal stripping, it's costing me £5550. I stripped everything non mechanical/glass off it myself too (interior, badges, bumpers etc). £10,000 for a Ferrari sounds like a bargain to me given how complex they are to strip compared to the little Abarth and the size difference.

I collected the engine from my Abarth on Monday to take it for a bit of fettling before re fitting it and two of us lifted it, by hand, into my 4x4. Try that with a Ferrari V8 hahaha.
