This bothers me in so much as if you decide to post a comment and then reflect on it after the 2 minutes grace you can't do anything about it, is that correct?

I realise you can be quoted but even so it makes backpedaling difficult

No, I think it just means if you leave it longer than 2 minutes you will get a "Edited By" footnote after that.
