isnt the carbon bonnet essential as it makes up the majority of the weight savings vs the normal car?

The bonnet is still carbon , just not exposed

It was done by Car Detailing and Protection based in Feltham near Heathrow.

The exposed carbon option was not available for the longest time, making it quite rare. I believe that in recent months, dealers have been able to submit orders with exposed carbon hoods again. The extended interior trim is also another rare option to have; this option was discontinued fairly quickly due to the complexity of stitching the back seats.
