I think you're missing 2 points. 1 is mass production, there's about 50 ice cars produced for each EV at the moment and scale reduces cost massively for all the components (which is why shared platforms are tempting)
2 is sales, what happens when you offer an EV version at comparable purchase price but have a supply of 1:50? How do you shift those ice cars that cost the consumer more to run, service, depreciate faster and are typically less safe?

Or more, and they are unwilling to improve whatever is needed, it'll either cost too much or compromise something else. So a good explanation could be that suspension, tires and brakes are not up to the task?
The overall weight could be reduced over the production life and that 5th seat added back in later I guess as the platform develops. I feel they've missed some targets but went with it anyhow.
Any situation I'd feel uncomfortable using the touch screen I'd feel equally uncomfortable using non wheel controls in any other car.
Obviously I have full voice commands if I need to change something without taking my eyes of the road or hands off the wheel which beats either kind of other control.

Having finally watched the CarPervert video if you've got a budget of £30-35k and really want a brand new family friendly EV I'm struggling to see why you would consider this over a Kia Nero EV other than the badge?
The ID.3 is RWD and probably drives better, not tried the eNiro but the Kona struggles to put its power down and I didnt like the ride quality (made me feel sick which is prtty impressive).
