Because road cars are more influenced by aesthetics than race cars are, and the car buying public seem to like ultra low profile tyres and large diameter wheels. Why, when road car styles tend to follow racing, do we not have tyres with a far higher sidewall profile as opposed to the thin line of tyre we currently have?

Regards tyres, I am not an expert but suspect that there is a mandatory maximum wheel radius (so that brake size and performance is also restricted), so they couldn't run 21"wheels with 5mm tyre sidewalls even if they wanted to. No idea whether they would lap faster on pram wheels but I agree all cars look better with meaty tyres on!
