You should read the comments on the article you posted OP where the author clarifies that it’s perfectly fine for a married couple to take out finance in that way.

In any case, if there’s any doubt just read the paperwork thoroughly and call the finance company directly if it’s still not clear.

Hi my fiancée has taken out finance on a car for me to drive for her as she has bipolar disorder and other mental health issues stopping her from being able to drive but has hospital appointments and we thought it was a good idea as she can have the freedom.
She has been excepted and we told the car dealer that I will be driving the car because of said reason.
How do I go about insurance and tax ? I hold a full licence as why I am the driver.
Should I be the registered keeper on v5 ?
Help would be grateful

You can insure the car without being the owner the same goes for the tax.

Yep. She can buy and keep the car on the V5.
You can insure and tax it.
