Depends what you want.
The 2.5l engine is well sorted now. Some of the early 3.0l engines users are reporting that there are early ECU issues (hunting etc.) that will certainly be fixed soon but you will be in that sense one of the early "guinea pigs" whilst Noble get things sorted.
As with any small manufacturer, Noble isn't able to run prototypes for 100,000's miles and years before releasing the car. The 2.5's have been around for some time, and run in examples are available around list price or slightly below.
Key thing is do you have the money to buy know? If so, you could buy a 2.5 now and upgrade to a 3.0l later.
In terms of performance, you'll notice the difference between the two cars, but that's a bit like saying that you'll notice the differnce between a Magnum and an AK11 - both will kill you - just the AK will probably do it just that fraction quicker
0-60 in 3.9 in the 2.5l is pretty stunning no matter how you come at it!
