There's not much in it driven the same the bigger wheels take a couple of pct but that's about it. The Performance has the ability to drain it's battery faster when you want though.
I've got a Model S 100D. The P was another 12k EUR which I found a bit rich. In 0-100km/h the 100D is closer to the TM3P than to the LR though.
For 5k I've probably would have done it.
First choice is the Polestar 2. The finance and lease rates haven't been announced yet. If they're unfavourable, I'm probably going to get the Model 3, despite my earlier protestations about the boot. It's about the best EV bang-per-buck out there (after the P2 in my opinion). Model Y is too far away.

It seems likely there will be a change to the Plug In Grant again in March. If the Govt do away with it entirely, thinking 0% BIK will pick up the slack (which also isn’t certain yet), then there will be a £3500 shortfall that will have to be accounted for in leases etc.
Tesla could throw us a bone and drop the prices by the same amount, but if they’re not short of customers - and that seems to be the case - they could play a waiting game for a while.

Polestar 2 was my first choice too and I have a deposit down, mainly due to the hatchback for my 2 dogs but having spent the last couple of weeks transporting them around on the back seats of my current car (as a kind of test) and also after realising that I don't really want to wait another 6 months+ for the P2 I've run out of patience and ordered a M3P.
It was starting to get on my tits just how much time I was spending daily thinking about the various options, reading forums and facebook groups, etc. The thought of doing that for another 6 months whilst I wait for the P2? Nahh, time to make a decision and stop wasting my time.

There's been a noticeable lack of updates/info over the last few months. It wouldn't surprise me if they do the same as VW have done with their ID3 and announce delays to their initial expected delivery dates. They were saying 'Spring 2020' not that long ago but they haven't even announced UK pricing yet.

Depends what you are after space wise. With the additional underfloor storage of the Model 3 boot it will hold a huge amount of stuff but perhaps isn't as long as the Polestar 2 for objects like longswords. Despite what the number of litres might say, it's certainly bigger than the Model 3 boot, having seen both. The hatchback is what I really need, but I'll live with the compromise if the figures don't work on the P2.

On your question about the P being worth the extra £5k over the LR I would definitely say yes as in a completely different league performance wise but the bigger question will probably be are you happy to live with the 20" wheels and sportier suspension setup? Also more compelling than the £5k performance pack option on the Polestar 2 I'd have thought which actually adds no extra performance?
P2 basic price is about £600 less than the LR Model 3. The Polestar Performance Pack just adds bigger wheels, Brembos, and those fancy Öhlins dampers. You get a lot more for your £5k when you go Performance on the Model 3.
I want the Polestar more, and if the finance is broadly the same as the Model 3 then I'll pick the Swede. If it's much more expensive I'll put up with the saloon boot.

Volvo is owned by a Chinese parent company and Polestars are made in China though, whereas Tesla/Apple are US owned and Nissan Japanese so not the same thing?An odd one as never seen anyone call Lamborghini a German car or Lotus Chinese, but then again I suppose they are still made in their countries of origin?
