Get an early dechromed heat pump car. I'd avoid the China built ones (any VIN start 5YJ on the M3) as the build wasn't so good
Doing so gets you:
Bigger battery than the earlier ones
Heatpump makes a noticeable difference in winter
Still has the parking sensors.
You might also want a car with the Ryzen CPU main screen as thats a bit more future proof, but very little in it unless you want to use zoom in the car
As for battery degradation, there are a couple of guides I'm familar with (because I wrote them), one using data avalable in the car, another uses the APi so not really applicable but gives much better benchmarking against other cars (has a about 100k data points in it now).
The performance v LR is an interesting debate. Tesla are not famous for their suspension, and "firmer" has never meant "better". Same with low profile tyres, at least not in the real world. The smaller wheels are much better suited to UK roads, plenty of stories of cracked rims from owners of M3P cars.

I thought some of the early 21 M3Ps were still made at Fremont, they'd would've had the heat pump, but not the heated steering wheel?

I have a ‘unicorn’ 3SR+ ; heat pump, heated steering wheel and rear seats, LFP battery, faster acceleration. Great car. How often do you need 0-60 quicker than 5.2s?

Ah well, I went into Tesla Heathrow to enquire.. and 5 minutes later I've ordered a new Model 3 Performance for £52k which was the same cost as my LR two years ago. I think I also got 10k miles of Supercharging. I'm hoping that the Performance will not depreciate as much as the LR but financially it is the same deal as I did 2 years ago so expenditure won't change but I have upgraded. Interest rate goes up from 4.9% from the 1st July. We expect prices to rise too. Is it a good deal? Time will tell.Car is due mid July
