Depends on the power obviously. Small block chevy engines start out at about 300bhp and can go on to produce 1000+bhp

A 300-350 would give a 0-60 in about 5-6 secs and 0-100 in about 13-14secs

The 450bhp in my Ultima gives 0-60 in 4 secs and 0-100 in about 9 secs. The Ultima is a lighter car so a second or so can be added to these times for a Cobra.

It would also depend on the gearing. Which ever way you look at it a Chevy powered Cobra would be swift ...... How swift depends on your budget. A stock 350cid with 350bhp would cost about £3-4k depending on how it's dressed. A 535bhp engine costs about £7-8k if imported from the states.

Edited to say ..... standin quarter mile times would be between 12 and 15 seconds.

I will add to the above, that especially at these power levels, the tyres become very important. A set of sticky tyres will shave noticeable amounts of time off acceleration times, but will cost more and wear out a lot sooner
