Looking to explore the limits of my car but not the the highway.

A trackday is ok, but looking for an area where I can experiment with understeer and oversteer in a very large area.

Ideally in the york area. Similar to elvington airfield. Large areas of tarmac to 'have a go'

Any1 ?

Long long way from you but I would recommend a day with Andy Walsh at North Weald - www.carlimits.com

Big open spaces and Andy will show you what your car can do and how to cotrol it when you over cook it.

Tockwith Multi Drive Centre might be worth investigating. They are certainly well set up for driving activities, but I don't know how much free reign they would give you for your antics.
