Does anyone know if there is any truth in the suggestion that the throttle mapping difference is achieved through not just sharpening response in 'sport' mode, but relaxing the response in 'normal' mode relative to a non Sport Chrono Plus car?

Ie a car without has a throttle map between 'normal' and 'sport' and as such the sport chrono throttle response effect is a bit of a con?

This does not apply to the GT3.

I've had cars with and without chrono, and the throttle response in the one with chrono felt a bit lazy 'normal' mode. I've not noticed that in my current car without chrono fitted. Both were 997.1.

I have a 997TT. Does anyone know if running the car constantly in sport mode affects fuel consumption in 'normal' driving?

I know this sounds like a strange thing to ask about such an expensive car but most of the time i wouldn't bother engaging sport mode as Im not in open driving conditions and it can be switched on and off easily. The sharper throttle response is better in sport mode and would be preferable in most driving however but its a marginal call and if it significantly increased fuel consumption i wouldnt bother for all the difference it makes in 90% of circumstances.
I would guess that it would have a small but measureable effect. However, the increased throttle response may 'encourage' more spirited acceleration?

True, but I also suspect that with a tip (which mine is) the car holds the lower gears for much longer meaning its revving higher and therefore the engine working harder.

Im not sure about the n/a cars but the turbo has a noticeably quicker throttle response in sport mode. Tested it on a long drive today. I have now retracted my earlier comment that it was 'marginal'!
