Entirely practical: With sunroof is stiffer than without. If you're serious about the thing as a track/competition car, you can always weld in a aluminium panel, and then you'll have a lighter, stiffer car.

Back in '92 - '95 when these cars were new there wasn't the same focus on "track" cars. There weren't track days to the same level there are now. I believe the vast majority of CS's were bought to be used primarily on the road. If the same cars was available today (Cayman CS anybody?) I think it would of course be a different matter.
