There's a point to be made in favour of using specialists with regards to resale, but I'm not convinced that it would necessarily translate in to a substantially higher price.

Money no object means a 100% accurate Speed12 recreation.
If 100k sounds like a reasonable ceiling then buy a 30-40k car from the classifieds and give the car plus the change to a respected restoration place, telling them you’ll be back to collect a perfect immaculate concours car in 12 months.
I’d argue that you would have more fun in less time for less money if you buy a rough one and do the essentials then use it as your track car - summer isn’t far away
