In a manual gearbox car, the engine revs should always go up in proportion to the wheel speed while it is in gear with the clutch engaged. If the engine speed varies independently of the wheel speed, either it's not in gear or the clutch is slipping or the transmission is broken. Since the problem is only temporary you can assume the transmission hasn't broken. So you can conclude it is most likely a slipping clutch. ETA I'm a little disappointed nobody else has suggested this after all this time.
How much can I expect this to set me back then including labour costs at SEAT main dealer you reckon? I'm awaiting a price but until then...

10 years ago Quinton Hazell were supplying clutches with a "lifetime warranty". If it wore out they'd replace the clutch and the labour cost of replacing it. My step father ran a garage at the time and he had more than a few people who'd destroy a clutch in 10k miles or less, and they actually honoured the warranty over and over again.
Sounds like the OP might be a bit rather heavy on clutches - worth seeing if anyone is dopey enough to have such an offer on?

Took it to the dealer and couldn't replicate the issue. That was two days ago, drove 150 miles since without replicating... Is a slipping clutch constant? The mechanic told me if it isn't happening all of the time there's no issue but I don't know whether to believe that or not. He tested the 'wear' of the clutch by putting it in gear with the handbrake on and feeling the biting point and said there's loads left...

No RIP me, potentially £800 down for no reason.I don't ride the clutch or drive this car hard constantly, 60% of my 20k miles have been motorway driving... I had a 2015 Ibiza FR which I put over 30k miles on with no issues. An owners group for the 1.8TSI engine Cupra's have ran a questionnaire regarding clutch wear issues and out of 100 people, 32 had problems before 20k miles... Says something.

So this "dealer" didnt even drive the car ?Sounds like it'd be better to go to a competent mechanic than a dealer...whatever it is they deal in.
