Would an e36 m3 rear axle fit onto a e36 320i saloon?

yep, if you have everything like the trailing arms etc, you might need to mess about with the propshaft though. the m3 input flange is a CV joint 6 bolt plate, and your 320 will have a 4 bolt prop end. it's possible that the input flange from the 320 diff will fit onto the m3 diff, if not, you'll need the flange from another medium case diff
