The guys that can answer your question are all out cruising today (Later M8 Cruise) but I'll throw in my tuppence worth. The VXR power can be matched for a lot less money if you upgrade a CV8 with Wortec or Monkfish performance packs. I think the front end of the CV8 looks better and as you say you can add a bonnet onto a 2004 model. But for me it was the boot size. There is no way that the wife and I could head for Glasgow airport with 2 suitcases in the boot of a 2005 model.

Its a matter of whether you want the HSV extras i.e steering, suspension and the 6.0l and the looks.
I bought a demo 04 CV8 because I needed the bigger boot and I researched beforehand what to do in terms of upgrades.
All cars need brake upgrades VXR included. I have got my CV8 to about 440hp and torque with a devil sounding exhaust system, lower geared diff all of which adds up to serious performance...for less than a new 04/05CV8! Its my daily car I use for work. If I turned up at my clients offices in the VXR it would cause me a few problems!
BUT if I was buying now and the boot was not a big issue (the 04 is really much bigger than 05) I would definately go for a demo/used 05VXR and add the wortec upgrades or hang and wait for results on supercharging!!

When I was buying I seriously considered the 05 VXR, Greens had (have) one in stock but then they offered such a blinding deal on a new 04 car (£24k) that I went for that and osetensibly saved myself £14000.
I think that deal is still available as it goes.
The VXR is perhaps a better looking car (although that is subjective and the sans spoiler look is growing on me - cleaner lines etc) and goes a reasonable bit quicker than my 04 in stock trims, but then I've now got a Wortec Sportpac on mine and the performance is virtually the same.
The VXR is £8k more (when comparing 05 list prices) than the standard car, that's a lot of beer.

You can buy mine if you like!!! It's the real deal from HSV (410BHP std) You would have to wait til March 6th though! (can't sell until 1 year after import)

For me, if the 2005 had the 2004 boot, it would be a no brainer, simply add the spoiler, the Wortec upgrades and better brakes and I'd be sorted.
Perhaps ex demo car to soften the intial bit hit.

Not sure if your after a 2005 specifically? But i have a mint 2004 CV8 which I may need to sell soon due to personal circumstances
Its in Impulse Blue, covered 13,000 miles and has a Linden stage II (410BHP) conversion with additional Wortech remap...
