I may be wrong but I think you'll find that the CF panels are not structural - the chassis stiffness comes from the bonded aluminium tub. The CF panels are lighter, thoughI've had a DBS coupe, a Vanquish Volante and an Vanquish S coupe.
I'd say the Vanquish is unquestionably a better car to drive. It is faster and rides more compliantly without compromising its handling or roadholding. I love the looks too.
However, the DBS has a certain something. I can't put a finger on it but it is a special thing. And it was a Bond car, if that matters to you (though the volante wasn't obviously.)
My logic for going from the DBS to the Vanquish was that I could sell a 7yo car and buy a 1 year old dynamically better car for only a few extra quid. I suspect that this does cap the value of a DBS and puts some support under Vanquish.
