Depends what you are after, if you want something running fine and sound but tatty you can find stuff from about £600 - £1500 that's alright, things like early R6's, ZXR's or jelly mold CBR's and the like.
I bought a G reg cbr 400 RR for £150. eyes wide open purchase, no exhaust, clocks, lights, panels, tank, airbox unknown runner.
Now spent the thick end of £800 on her and now got Chinese replica painted fairings (good for the money ), new stainless exhaust and silencer, good clocks from ebay, lights, powder coated wheels, rebuilt forks myself, new bearings, lots of expensive Honda bolts!! All I need now is a tank, airbox, rear shock (last expensive item), coils and some bolts and she is ready to fire up.
It took a while but will look great and probably only cost me about £1250 in all and is a nice example that has been stripped and rebuilt, so I know its mechanically sound, for £1250 you could get one running fine but is a bit of a heap.
but if you want a track fun machine for £1k looking at obscure stuff like the Yam 400 FZR, early GSXR 400, 93 era gsxr's etc can be had for this money that aren't death traps, but as many say winter will reap deals, and up here in Scotland you are dealing with a smaller supply pool.

well looks like a no go for the gsxr.
he accepted my price, I asked him to deliver it to me. As I mentioned, the tyres arent legal, im not sure it would make it to mines and I suspect he hasn't bothered his arse fixing the peg. Last time I wasted 4 hours and a 120 mile round trip because he described it as perfect, it was far from perfect so im not wasting my time again.
He said he couldnt deliver it due it having no tax, I offered to reimburse him if he put 6 months tax on and he hasnt bothered replying. Ah well. The other half will be pleased.

It means I can get another bike to fill the garage to capacity.

I've amended my price on Gumtree to match the eBay ad but I suspect it will just have bidders on the auction. Can't really lose as I've started the auction at what I paid for it.
It's possible that the price on Gumtree was putting people off. I tend to see Gumtree as a bargain-basement place. including topbox and panniers. The panniers were a bit beaten up but I've just refurbed them and they look good now. 12 months MOT, but no service history and the MOT mileages for the past few years are all over the place (possibly new clocks, possibly a typo, as things like the foot peg rubbers and all the alloy parts are like brand new) but it runs and rides well.

I was still waiting on getting the gsxr from the wheelie king.
he accepted £600 +40 tax and fuel costs to bring it to me, then never got back to me.
told me to come get it, when I said he did he told me it was sold.
so I emailed him (I had only texted him before) and the bikes still for sale but at £800, wtf.
its not worth £800 as it needs £500 spent on it. so fk him
