Do you mind me asking where you got your custom moulded ear plugs from? I'm in the market for some of them and a recommendation would be great
I got them from Mercury Hearing. I’ve not had any luck getting them fixed yet, need to try calling them again tomorrow actually. If no joy then I might try Ultimate Ears instead.

Just to update:

I got a pair of Interphone Tour's from Sportsbikeshop on offer, for just over £300.

I wanted two mounting kits for my helmets and in the end I just got a twin pack.

The single unit was tested in Wales, the weekend of the storm.

Sound
Sound is very good for in helmet speakers, especially with ear plugs in. Not an incredible amount of bass. But then if you're expecting studio quality sound in a helmet at motorway speeds then I think you may be disappointed.

If you turn off auto-volume you get a lot more maximum volume. But I didn't have to use it at anywhere near max volume with my Schuberth SR1. Maybe a little more needed with the X-Spirit 3.

Phone call quality is excellent. The calls that I took came through clearly and no one realised I was on a bike.

Installation
A bit fiddly with the wires but not too bad. The glue that holds the microphone velcro on is terrible and the stick pad basically fell off and I had to re-glue both of them. The clamp and sticky mounts work well.

Operation
Not too bad, but with winter gloves on finding the right quadrant to press can be a bit difficult. The voice activation with an iPhone is very good. I could make calls through the phone and WhatsApp through voice activation.

The unit was 100% waterproof through some pretty horrific weather and over 3 days I didn't have to charge it at all. Possibly if the Intercom was being used it may have been shortened.

The interphones are great.
Ditto your opinion on the microphone foam glue - I add extra to make them fully secure.

I didn't know you could switch off the sound volume thing - mine at the moment is too quiet. I'll turn it off tonight and see how it improves.

Battery life if you aren't using them as intercoms is mental, weeks and weeks of commuting.

If you're happy with cheap and cheerful, I've had a set of these (or similar looking ones) for the past 3 years with no issues:

They work fine, and for the money do everything I want. Quality is fine for chatting or music, but maybe I'm not that picky.
Second this. I just bought these a few weeks ago. Buyee rebranded all over the internet but for £55 including delivery. I bought them to help train my son on his motorcycle. He loves them. Listens to music/answers the phone, and direct connection for training.

The battery seems to last forever. Very clear/loud and the range is quite impressive, a few times he has disappeared out of sight into the distance and they still have the range for me to tell him to slow up till I can see him again.

Honestly I don't see what spending two to three times that price and more on a system achieves? It can't be sound quality cos ..... well.......you're on a motorcycle.
We too use these all the time. The battery lasts a good few rides, and we've never had any problems with them, in the year we've owned them. Highly recommended!

Do these all work on the assumption that you're not using earplugs?
Work fine with earplugs.
I have a scala Q1 and a Q3

I wear earplugs and listen to the raido and chat on the phone at way over motorway speeds.

They are waterproof. Mine has been submerged many times
