Pointless tuning the 800 IMO
Get a quote on a Tiger 1050 - upright position with no off road pretention, 17" front wheel
I prefer my KTMs but 1050 Tigers are a great budget buy and I suspect sensible insurance
Fantastic engine, they seem a bit dull at first but if you start throwing it around, it responds surprisingly well

OP, I doubt when you say you are missing extra power that you are revving it to max power as it is. What you are likely missing is more torque. For torque there is no replacement for displacement.
OP I currently ride a gsx1250 and they are a decent bike which has lots of grunt, they aren't overly fast though but it just pulls in any gear at any speed. I'm planning a long euro trip for mine this summer and think it will be perfect for that sort of riding. Something to note is they are quite a lump and the brakes are hilariously bad.
I ride mine regularly both on my own and 2 up and to be honest for the cost of them I think you'll struggle to find a better bike for the touring end of sports touring.
Sorry it doesn't help your dilemma much but as other posters have said a remap alone won't make massive amounts of difference to your current bike.

I went from a Tiger 800 to a Tiger Sport 1050 because I didn't really like the engine on the 800. The 1050 has a great deal more 'go' to it, it's not a racy engine but it's excellent for road use - it's a very flat torque curve and it starts way down, so it's quite forgiving of gear selection etc.Either that or NOS
