Just wondering if I should be expecting any 'major' surprises...

gear selection is notchy/stiff into 3rd or 5th on occasions (sorry synchro!)

had all new brakes, suspension upgrade and s/s sports exhaust.... oh and a couple of wheel bearings too!

Rust, head gasket, chains. Head rebuild and new chains is fairly common at 100k.

VW gearboxes are notoriously notchy, change the oil for really good quality stuff. Won't make it go away but will make it better.

Could the notchyness not be attributed to incorrectly adjusted or worn cables?
There is lots of debate about chains. Some have over 200k, with original chains, but the advice seems to be 100k. Some also recommend just a tensioner change. The chains are on the gearbox side, and an expensive repair, so you may as well change the clutch and carry out a top end rebuild.
Mine has 134k, and i'm tempted to leave the chains till they break(and then go for a 4-motion engine) or till I need a clutch.
