I suspect you're right.As far as I can tell, the new Apple phones are not true NFC devices - in that Apple are restricting NFC access to it's own ecosystem only. Whether they open this more broadly, only time will tell.
But as others have suggested here, whilst Apple are typically late to the party, they will drive acceptance because there's a ready market of folk who trust Apple and as you say, like to follow.

That is true for EE Cash on Tap. I literally have no idea on the Apple implementation so I can't answer that, sorry. Or does it need to be specially configured for Apple?

- Most likely similar to how apple reported the charging circuit issues with macbooks a few years ago - just deny it and provide a free battery, then record it as something else.A bit like the devices shipped vs devices sold into channel vs sold to an actual end customer game that most manufacturers also play
