I’ve got a 7 year old 27” iMac that’s used mainly for email, Excel and light photo editing and photo storage via Ligjtroom.
I currently back up to a 1TB Time Capsule.
The Mac needs replacing as it’s getting very slow and I really don’t need the size any more so it would be great to have something more portable/compact.
What would be the best replacement option for the above out of a new iPad Pro or MB Air? Or is that one of those questions that only I can answer?

Mrs G has an iPad mini which we’ll probably upgrade to a full size one at some stage too.

Everything is moving to the cloud. My Mac files are there, so they are also on my iPad. MY work stuff is on OneDrive for business, other than very secure stuff and that too will move to the cloud once clients understand that it is at least as secure as corporate servers. I'd agree with this, but depending on the spec of the iMac than maybe a 13" TouchBar Pro would be the better replacement? I couldn't just have an iPad, I see it more as a complementary device.
Either way, something that runs full Mac OS is the best bet.

Apple are on a crusade to move people away from device storage and to make everything wireless. Upsetting a lot of people along the way but I guess within about five years we will just see it all as normal.

Apple love locked down ecosystems, since that's how they make more money, starting all the way from original iPod and forcing users to use crapTunes with no logic in file structure. Locked down ecosystems eliminate user confusion and make things simple and "user friendly" to an average laymen who don't want to care about folders and files they want to have their st there hence why they don't mind overpaying for it knowing they won't suffer same pain as with e.g. Windows and also to similar extent Android.

They might well offer it but how many people will buy it? They know full well the vast majority of people will be willing to buy the smallest storage and then use the free cloud they get and be enticed then into extending it. craigjm said:

It's more about sandboxing - making it difficult for any compromised App or Program to gain access to any other part of the machine. Is it really a business decision? Or is it more to do with the company's philosophy?
To be fair, it's worked very well for them, given the number of iOS devices and the relatively few security compromises they have had.
The question is whether they can or will implement something closer to MacOS, which has both Sandboxing and access to the file system.

The results are arguably a more reliable and secure device. Happier customers, more sales.But they are limited, critics will cry. Perhaps, but they've sold over 2 Billion of them. A big part of that success is relative reliability.
