I fancy some slag food for dinner tonight - anyone got any good recipes for Corned beef hash ?

Cut potatoes into smallish 1 inch chunks and par-boil for 5-10 mins.

Drain and allow to steam dry.

Fry up one diced onion in olive oil until soft in a largeish frying pan.

Open can of corned beef and chop up using a fork into rough 1/2 inch pieces.

Add potatoes & corned beef to onion, and leave to cook / warm through.

Once potato is cooked through the corned beef should have started to stick to the pan slightly.

Turn out onto plates and adorn with some hot baked beans

Eat

Corned Beef Hash......DONE!

What's your potato to meat ratio? Was that 1 decent size potato to a can of CB?

Not had it in years but when a kid we always had it with mash and the onion/cornbeef mixed up in and then grilled.

Glorious smothered in ketchup.

In fact I'm going to make it tomorrow.

The power of suggestion eh?

If you use 1 can of CB I reckon about 2 average sized potatoes per person.

Corned beef is such an underrated foodstuff.
Either in a sandwich with tomato and salt or in a hash it makes a very tasty and cheap meal. Even if you can't have it too often for fear of a heart attack.

a staple food as a kid, loved it to bits. always combined everything in a heavy pan, allowing the onions & potato to sit in the oil and caramelise and adding the beans in last to simply heat through.

splodge some into a bowl and cover with brown sauce lick

corned beef hash soup is also great. simply cut everything smaller and add water & half a tin of chopped tomatoes.

My camping/slag recipe is simple:

Instant mash
Tin Corned Beef
Tin Baked Beans
Tin Toms

Add water to mash, then add to the other ingredients to a big pan and fry till nice and warm and mushy. Delicious after a day of walking in the rain on Dartmoor.

At home I would fry an onion first and use real potatoes, and use some more seasoning, but nothing more complicated than that.

if you can be bothered. Makes a nice change from the usual fry up of a weekend, and the gherkins work better than you'd think.

Here's my recipe which is probably a bit fussy but works well if you're after a big corned beef hash

5 or 6 good size Spuds quartered and par boiled with skins left on
4 Carrots chopped coarsely also par boiled (5-7 mins usually will do)
2 Tins of Corned Beef
1 Onion, chopped
1 Beef Stock Cube
Worcestershire Sauce
Soy Sauce
Paprika and Chilli Powder.

First get your Spuds and Carrots on the boil, then fry off the chopped onion in until transparent in a little oil adding a little bit of Chilli Powder for a bit of a kick.

Cut the Corned Beef into chunks and add to the onion in the frying pan, keep it turning so that it doesn't stick but be careful not to let it disintegrate too much!

Take the Carrots off the heat and drain well before adding to the frying pan. Now drain the Potatoes and once thorougly drained crush gently with a potato masher BUT DO NOT MASH! Add somewhere around 2/3rd of this to the frying pan... if its big enough.

Make up a little bit of concentrated beef stock with your Stock Cube and about 300ml of boiling water.

Tip the contents of the frying pan into an oven proof dish and then top with the remaining Potato.

Pour over the Beef Stock, but only use just enough to cover the bottom of the oven proof dish, then a couple of dashes of Worcestershire Sauce and Soy Sauce. Sprinkle over some Paprika for colour and salt and pepper to taste, then bung in the oven on a high heat until you get that crispy top you're looking for.

Serve with proper HEINZ Baked Beans!

I'm a tramp/charva and add a tin of bean, chopped up frankfurters and loads of chilli to my CBH sometimes!

Another option is:

Sliced Potato and Sliced onions in layers.

Grease an oven proof dish with butter.

Build up layers of potato and sliced onion, add small knobs of butter on every layer of potato and grind a small amount of salt on every layer of onion.

Cover with cling film and microwave for 20 mins

Take out, peel back the cling film and using 1 large can of corned beef and ut into slices and layer over the top of the potato and onions.

Put the cling film back over and cook for a further 5-8 mins.
