OK dokey. I have 1.1kg of chicken wings sat at home ready for the BBQ at the weekend.
Does anyone have any favourite marinades they can recommend?
I was going to try Cola Chicken on a few, as well as the tried and tested chill/garlic/onion marinade and a tikka marinade. Any other suggestions welcomed.

I'd suggest making a nice Jerk marinade... There are plenty of recipes out there, but if you want a recommendation Dunn's River Jerk Marinade is delicious but use it sparingly, as it's powerful...

Peri Peri is a winner, either out of a bottle or make it yourself.

I am also partial to a mix of Lemon juice, crushed garlic, olive oil, black pepper and oregano for a mediterranean vibe.

good luck with the weather!

hehe

No, seriously. Lime, chillies, brown sugar etc etc etc, makes chicken zingy!

Honey and mustard is always good.

A good Peri Peri one is: 10 cloves of garlic, 2 red chillis, zest and juice of a lemon, bunch of thyme (or lemon thyme), dollop of tomato puree, dollop of bottled peri-peri sauce, healthy slug of olive oil, all blitzed together.

It's meant to be nice, but looking at a heavily overcast sky outside I'm yet to be convinced. I may have to do it proper Brit style and stand there under an unberellaellaella. Eitherway, the BBQ is going on!

I tend to use

"Zingy Wings"

Big teaspoon chilli powder
Teaspoon paprika
Slug light soy sauce
Slug dark soy sauce
Big shake Garlic powder
Slug of groundnut oil

Toss wings until evenly coated. BBQ until crispy/crunchy.

"Sticky wings".

Only put on 2/3rd marinade above. Reserve 1/3rd. Add tomato sauce and a little honey. This is your "glaze"

Take the above and BBQ wings until cooked and crisping up.
Smear glaze on and finish cooking for just a few minutes. Do not allow to burn - will crisp up fast and go black if overdone.

The sweetness works well.

Crispy. The skin has to be dry and crispy. Soggy chicken skin is gross.

Absolutely. yes

Here's an interesting recipe: "Ultimate Wings".

Guinea fowl wings: as many as you can get.

Lightly oil to help the following to stick. Salt. Black pepper.

Roast in an oven until crunchy: about an hour (ish).

Guinea fowl has more subcutaneous fat than chicken even and the skin goes off like crackling if you get it right. Super tasty.

Oyster sauce wings are nice too.

Few glubs of Oyster sauce
Honey
Dark Soy
Chilli
Garlic
Ginger

Mush together and marinade for a good few hours over the chicken.

Try honey, chilli and sesame seeds

Can also substitute honey for maple
One of the spice people do a nice cajun spice mix too, be frugal though, it's quite spicy

Normally I avoid ready-made marinades in the belief I can do better myself. The one exception to this being Reggae Reggae sauce. Crispy chicken wing Heaven yum

I did a selection of whatever I could find in the fridge, including some chinese BBQ ones, some curried yogurt ones, and some in soy sauce, ginger, garlic and red chilli.
Ruddy lovely there were with a potato salad and fresh salad.
I think I've found my new trademark offering for the summer BBQ season.

Wings?

Pah!

Try spatchcocking a whole chicken, marinating it for a day or so, then barbecue it whole over charcoal.

That's how you barbecue chicken.

Takes about 25 minutes skin side down, then another 15 or so skin side up.
