Just made "leftovers" soup.

I had

Cooked stuff:

100g Thai Chicken Gravy (Dark and light soy, chilli and we'd cooked chicken in it)
Pork, Sweet Potato and White Wine Casserole - juice left over, some sweet potato (mashed up) the odd chunk of pork (shredded). About 300ml
Three cooked lamb chops. Meat taken off and shredded.

Uncooked stuff leftover from tins opened:

200g Borlotti Beans
200g Passata


To make the soup base I used Sainsburys' "Cottage Soup Mix" which is dried beans, split peas and so on. 200g of that boiled vigourously in 750ml of water for ten minutes, then simmered for an hour. After the ten minutes I added all the other ingredients and did the simmering with them in.

It was GORGEOUS. Yummy!

The Cottage Soup Mix creates a thick sauce with the beans/peas in and the passata and sweet potato combined with the various gravies and juices to deliver a rich tasty flavour.

It made enough for a taster now, portions for two for the freezer and two lunches for my wife for next week.

If I ever have the same ingredient set I'll be making it again!

It's nearly always ok (unless you make lousy combination choices) but this one was GOOD! lick
