For a bit of a change tomorrow instead of roast beef I am going to cook tuna steak. Now normally I just cook them much like a decent steak, season and rub some oil onto the tuna then few mins per side on very hot griddle.

I am looking for inspiration, other ways to cook them? Marinades etc?????

I think lime juice, coriander, chili, sugar and fish sauce are your best friends here.

Personally I'd leave it alone apart from oiling and a good salting before cooking. I like tuna steak simply char-grilled, with salad and mango salsa on the side.

Mango salsa

1 mango, finely chopped
1 red onion, finely chopped
1 red chilli, deseeded and finely chopped
Small bunch fresh coriander, finely chopped
Juice of 1 lime
Pinch of sugar

Mix the above 20 minutes before serving.

Don't cook it. Just sear it. Should still be raw in the middle.

Nothing worse than dry, overcooked tuna.

Marinade it in a mix of olive oil, garlic, salt, pepper, lemon juice and say sauce, then sear very quickly in a hot pan. One of my favourite things in the world to eat.

Make tuna burgers and serve on a bun with watercress and wasabi mayonaise. Lovely.

Sorry no pics but they were lovely!!! Marinated them overnight in the following....olive oil, soy sauce, chilli flakes....then seared them on very hot griddle for about 1min per side....charred on outside pink on inside!!

I always get

Fresh chilli

corriander

garlic

ginger

and some sweet chilli

all in a pestle and morter, add to the steak 20 seconds before they are finshed
