Engine Builders and Tuners

Hi PH folks
I'm looking to get an engine built (forged pistons, cams, twin carbs etc.) and then tuned using a stand alone ecu (Megajolt/Megasquirt, Emerald etc. or whichever the tuner prefers).
I would preferably have it built, run in and tuned by the same shop, as far north as reasonable possible, however driving down to Southern Scotland isn't an issue. Who would you guys recommend?

For extra info its a MK1 Golf GTi 1.6 engine
