John Chipchase at MFA is a lovely bloke and I've trained with him and his crew in Thailand a couple of times. He would be my go to in Manchester.
Ultimately as a 50 year old you have to be both realistic about what you actually want from it and find the right gym. Some you just won't get along with for whatever reason, of which there could be many.

I know you were joking about driving over to Leeds to train with Jompop, but I'm actually tempted John Chipchase also sounds like a solid choice. I'm thinking about getting a few private lessons first just to get my basic fitness level up to where it needs to be. Perhaps at a few different gyms to see which one works best for me. A bit of googling today also came up with Master A's Gym and Panicos Yusuf at All Powers Gym.
