The supposedly "leaked KFC" recipe
Discussion
Doesn't taste like KFC, but rather much better.
didnt know where to buy the Monosodium Glutamate (MSG) so ebayed it.
the rest is standard stuff.
1 teaspoon ground oregano
1 teaspoon chilli powder
1 teaspoon ground sage
1 teaspoon dried basil
1 teaspoon dried marjoram
2 teaspoon pepper
1 teaspoon onion salt
1 teaspoon garlic powder
2 teaspoons salt
4 teaspoons paprika
6 teaspoons MSG
2 mugs of flour (sorry not a very accurate measurement
keep that mixture handy in your cupboard, it will last you a good few gos, so don't use it all at once.
Cut chicken breast into nugget sized chunks,
it's important to stress the importance of small size chunks to help maximise the ratio of chicken to coating
whisk 1 egg and roll the chicken chunks first in the whisked egg, then roll around in some of the powder mixture until it wont take any more powder mixture.
deep fry for 7 minutes.
take them out before they look completely cooked, and roll in the mix a second time, and put back in for a few more mins
perfection.
you MUST have the MSG, its not the same without. ebay it, only a couple of quid and well worth. Ajinomoto is the company that invented it. ignore the rubbish stories about it being bad for you, absolutely no scientific evidence to support this.
serve with some mayo.

Thanks guys, i have no cookery skills at all other than being able to follow instruction. if you follow the above it comes out like that. yep thats my photo taken with my phone (galaxy s2). Found a little electric deep fat fryer in sainsburys for 15 quid which seems to do the job fine. would love to hear back from anyone who gives the recipe a go

Oh wow, that looks unreal! What oil did you fry it in?
Fried in sainsburys own brand sunflower oil. more than good enough. I used to think olive oil is best for everything but its a bit wasted on stuff like this. standard cheap veg oil or the likes is fine, but again let me know how you get on!Pot Bellied Fool said:
They look lovely - I feel a takeaway lunch coming on - but I won't as I need to lose many stone!
But with a slight thread hijack regarding the deepfat frying... I've never deep fried anything, generally grilling or dry-frying.
So just how bad for you is deep frying? Can I do it in a deep pan & what's the best oil to use? Is it worth gettign a little fryer & if so, what else should I be thinkign of doing in it?
Thanks
Frying is the least healthy thing you can do to your food. which is why it tastes so much better of course! But with a slight thread hijack regarding the deepfat frying... I've never deep fried anything, generally grilling or dry-frying.

However if you must experience the delight of this dish, that 15 quid mini-fryer in sainsburys is nice and compact, some sunflower oil and job's a good-un

Looked perfect, with the right texture, but my approximated recipe whilst the forum was down meant I was too restrained with the salt, msg and other herbs. Meant it was a bit underwhelming on flavour.
Like I said, though, I'm all set for the next batch. At least I know I've nailed the method, at least!
Good job! Let us know how round 2 goesLike I said, though, I'm all set for the next batch. At least I know I've nailed the method, at least!
This little beaut only costs £15 at sainsburys , and it's what I use. It's pretty small, and simple cheap vegetable oil is fine (people, it's silly/wasteful to fry with olive oil, keep that for dressing!)
I just crank it up to it's max temp and they're done in about 5 mins (I tend to keep the bits of chicken small as it's easier to be sure they're all cooked - it's harder to be sure of things being cooked through if you're using bigger pieces. plus using smaller bits gives greater surface area for coating, so increases the coating : chicken ratio!
a "cup" is actually some sort of official size, you can buy a set of measuring cups specifically http://en.wikipedia.org/wiki/Cup_(unit), I have a set of measuring cups, but amen't sure what country's standard they adhere to!

I just happened upon this thread and instantly thought "Amazing. I cannot wait to go around and purchase all these ingredients to make something that tastes a bit like KFC and is equally unhealthy".
I had even started to mentally wonder where I could buy a deep fat fryer (frier?) on my way home form work.
And tehn I realised that this is completely mental. Rather than go to all this effort to create something that tastes a little bit like my favourite guilty pleasure, it would be quicker, easier and cheaper to go to KFC.

That looks bloody lovely.
I've tried all the so-called 'tricks': the brining, buttermilk, double-dipping in egg...
Nothing comes close to the real thing.
Now if KFC were to offer a premium version, using free-range corn fed chicken rather than the cheapest ste, that would be something I could see myself killing for.
I absolutely adore KFC. It would be my Death Row dinner.
With Krug. (Try it.)
Sure, but _which_ Krug? I'd recommend Clos d’Ambonnay. You're spot on regarding the kfc chicken itself - it's not the finest, and upping the quality there would be awesome. Still, I doubt their average consumer cares, and to do so would be to admit that their standard chicken is steI've tried all the so-called 'tricks': the brining, buttermilk, double-dipping in egg...

SJ brought this to my attention in the DT thread, so I had a bash this evening. Slight variation as I didn't quite have the same ingredients but for first attempt it definitely has promise with some fine tuning. I used two legs, two thighs and one breast cut up in to small bits.
I used smokey paprika instead of standard paprika. I used rape seed oil as I had a load to use. I very slightly undercooked the drumsticks but only by a couple of minutes or so. They were cooked through but would have been better left a bit longer on the second fry. I didn't have any mayo so I tried burger sauce and it was OK.
My preference would be to have a bit more heat taste-wise but I can see from where the approximation of KFC comes. I would add a lot more pepper and/or chilli powder for a bit of oomph next time and from what others say MSG is needed. Overall though, this could well be a staple monthly treat.
