Best combination of Burger and Ambience (London)

Hi,
I'm looking for somewhere for a Thursday night out that serves a good burger, but in nice surroundings. So places like Patty and Bun are out, even though the burgers are fab. Some steakhouses have a good burger, but for many of them it's only available on bar menu. I've been to Cut at 45 Park Lane a couple of times, the burger is fantastic but only available in the bar. I've also tried Bar Boulud, and liked their burgers too but fancy trying somewhere different.
It must be somewhere that will serve the burger medium rare (so that it's actually pink in the middle) and has a reasonable wine list.

The Ivy looks good - but no chance of a table this week (should have mentioned it was this Thursday I was looking for). I will put that on my list.
The Opera Tavern is also on my list, but will wait a while as we went to Ember Yard quite recently
Not sure why, but the Meat Co doesn't grab me
