Grand Cherokee hand brake adjustment ?

Anyway, going to fit new hand brake shoes to the Grand soon.
If I leave the box in neutral and have both rear wheels of the ground can I turn them by hand to set the brake shoes correctly ? Its not going to try and turn the other wheels or something ???

Had a go at this yesterday.
In the end I set the hand brake shoes to their max, but still allowed the disc (or Rotor if you like)to just slide on and off the hub.
When I turn the wheel the resistance of the drive train means I cant "feel" if the shoes are rubbing or not, untill I adjust too far and it locks up.
Hopefully Ive got it about right to not rub, work properly and pass the MOT
