Best Variation of Impreza

Evening ladies and gents!
Very new to the scooby scene- I’m looking to join the crew of Subaru owners. I’ve done a fair bit of reading on them, but I’m still a little lost when it comes to different variations.
I took a GB270 out over the weekend- brilliant; but maybe I’m biased as I’d been wanting to drive an Impreza for far too long!
I see that aside from the GB270, you have the RB320, WRX, WRX STI, Type UK...and then on top of all that, the various different iterations such as the blob eye, Hawkeye, etc etc.
Cutting to the chase- what are the differences? What is the best model to go for? A 320 is out of my budget really. And ideally- although I have heard many stories of chocolate engines where the 2.5 is concerned- I’m after a later version, between 2005 and 2008.
Is the GB270 worth the price difference over the standard 2.5 WRX saloon? Is it better to get a tidy WRX 2.5 and then mod it yourself? How fragile is the engine really?

Aesthetically, the hawk just looks better to me. Obviously though there has to be the consideration of long term implications when it comes to the slightly less robust engine.
Outside of forging the engine, what else can you do to protect the integrity of it? And what should you look out for when buying one?
