And yes, this is a thinly disguised prod to stop me watching Strictly or something for tonight!
There’s lots of them out there but in recent years this one comes to mind immediately...

Not sure about best control, but undoubtedly the best balls to the wall fearless I've ever seen.

About 2 minutes into this one, nudges the wall and still manages to make the gateway then carries on with puncture

Too many others to mention or go searching for videos now. Walter Rohl in a 911 in the snow. Jean Ragnotti in a Renault 5, Richard Burns in his Subaru, Ari again in Climb Dance...

Mark Higgins in the Impreza giving the journalist a passenger ride around the Isle of Man course was a pretty impressive save

In the embedded Road & Track video, the call for new underpants goes out around 0:50 seconds in.
EDIT:
Yes the Manx clip above also sprung to mind, especially the speed of continuing on with that puncture

As I'm old, this is still my favourite and left a lasting impression of me some 40 years ago.....
Proper cars, proper drivers..... (and in a pre-H&S era, with no helmets or racesuits, and joe public were cross-country skiing in between the cars running )

I'd be interested to know what the camera (estate) car was, and who the hell was driving it!

To be fair, quite a few of these are the opposite of "car control" from what I can see (mine included).

In terms of saves (as above), for me it's Verstappen at Brazil, but not the one in the wet linked to above (that was really low speed when it came back). This one was mega:
https://youtu.be/9sWky-yBBNc?t=134
I'm guessing he was comfortably over 100mph when it started, and he made full use of the steering and presumably brake and throttle together to shift the brake bias. I can't see it being possible to catch a slide any worse than that. I think this one was in practise or qualifying on the same weekend as the famous wet one on the start/finish straight.
In terms of pure car control, some of the stuff Senna did was astonishing. The trouble is, the optimum slip angle with a slick tyre is so small that you can barely see much of it. In a car with bigger slip angles it was really obvious (for example: https://youtu.be/Lo5wDmJGYGo?t=78).
