I'm getting used to it now and getting better with the nice dry weather we are having.

my only worry is the center stand and hitting it on a corner.
what would happen if I did hit it?

I have paddock stands now but not sure about taking off the center stand as its connected to the cut off throttle. how easy would it be to take it off

If you do get to touch the centre stand mid corner then there is an impressive shower of sparks and an ‘audible warning’ that you can’t lean over any further. I’ve never pushed beyond this point so can’t comment further on what would happen next!!
