Alfa 156 with rear wheel drive.
Or even better, a 155 with RWD.

Electric jimny in 2wd format

They’d shift a tonne if they made those, would not need a massive battery, so cost would be reduced, we’d buy one in a heartbeat (we like jimmy’s here)

4 door jimny, perhaps small sliding rear doors
The 4 door is available in some markets. 4 proper doors. Looks like a bool washed G wagen.

...And a K20 CR-Z would have been nice.
On the subject of Honda engine swaps - the recent Civic estate would have been a superb yet sensible car if available with a K24 or the latest 1.5 petrol turbo. (I assume these engines are actually too old and too new to have been used in reality).

I'd have loved the Mk6 Fiesta RS concept

Also think an Octavia Wagon with the Golf R drivetrain would have been ideal, they could have kept the Golf to the normal hatch and the Octavia 'Wagon only' to protect Golf sales.
Did this not go on to be their wrc2 rally car body shell?

I always thought this was a good looking car which wouldn't have taken much to bring to production:

I wanted a V6 RX8. Rotary purists would be horrified, but there would still be many RX8's on the road if it wasn't for the Rotary grenade.
MX-5 with a rotary engine may have been fun. Or a small V6 like that fitted to the MX-3 coupe.
I ran the European launch event for the RX-8 and the car Mazda Europe gave me to drive around in - a 2nd gen MX-5 with a Renesis rotary engine, done as a skunkworks after hours project at Mazda Europe in Leverkusen - was scrapped at the end of the event but was a fun little car to run around in

Lotus Esprit V8 with a sufficiently capable Getrag or Graziano transmission. It was always limited to 350 horsepower and 350 lbs*ft by that horrible Renault transmission and I find it hard to believe that they couldn't have sold an Esprit Sport 450 for ten grand more to cover something capable.
And then who knows what could have followed...

I'd have sold a child or two for one of these

I thought VW would clean up with the Blue Sport concept in production but they couldn't make the numbers work (or dieselgate spaffed it up, I can't remember)

I’d like to have seen BMW transfer the carbon chassis technology from the i3 into the 1, 3 and 5 series.

I can't help but think that if the RX8 had a sensible engine then it would just be like the GT86 and everyone would moan it was 'underpowered'.

Jeep Grand Cherokee TrackHawk Super Stock.
Standard TrackHawk ‘just’ has the regular HellCat motor, which is about 710hp as per the equivalent Dodge Challenger. But the Challenger also has the option of the RedEye at 797hp and Super Stock at 807hp. The standard TrachHawk 710hp is plenty off the line and at lower speeds, but above ‘certain speeds’ the face-distorting acceleration drops off and the extra 100hp would be most welcome. It’d be the only thing I’d trade the TrackHawk in for. Come on Mopar - we need more power!

An Alfa Stelvio with some lowering springs is pretty much a Guilia estate anyway.

I think they should have used the i3 chassis and running gear and stuck a pretty two seat convertible body on it.
