I actually brushed melted duck fat on them and roast with sea salt.
I've been doing it for years, it came from my wife who used to work in a little pub near us years and years ago. At the end of lunchtime service if they had any jacket potatoes left, they got chopped up into wedges, deep fried, heavily salted and put out on the bar.
Such a shame you never get stuff like that any more, at least I havent seen it.

Wife and I had them last Friday, they weren't too bad. Cooked them using the Heston Bloomincomplicated method of turning them every 15 seconds for 3 and a half minutes, with a nice mushroom fricasee and a great big sourdough crostini on the side.Very well marbled to give it credit, not sure if this is a one off. A proper steak knife cuts cleanly through it and makes it "more tender" as a result even before you get it to your moouth. Avoid those serated fancy knives with horn handles .... damn and beealzebub, worst ever. Complete style over substance.
