I got an Espresso Martini kit for Christmas. Excellent ingredients and a pretty good overall result - certainly good tasting

However the signature foam on the top was really not there. Compare it here with a “pro” effort.

Any thoughts on how to improve?

How are you making the espresso?

Suggest two teaspoons of instant coffee with splash of boiling water, 40ml vodka, ice and honey to sweeten (as per TV @ the weekend and how my old FOH manager used to make them).

In the kit it was a can of cold brewed coffee. We also tried with a couple of a Nespresso shots.

You could use an espuma gun if you want an excuse to buy a gadget. smile

I'll make one tonight and let you know how I do it.... I can't remember without doing it. I use an nespresso machine and can get a decent foam.

I think you'd struggle to do any better than you have with a cold brewed coffee. You need a decent espresso unless you start looking at other fillers and gadgets.

I make mine with a single Tia Maria/Kahlua double vodka, double espresso and a squirt of a dark simple syrup that has a touch of vanilla extract in. Never had any issues so long as it's shaken well with plenty of ice.

Equivalent measures of Vodka, Coffee Liquor (I use Mr Blacks), shot of Nespresso using the strong pods - into your shaker over ice putting the coffee in last so as to not melt the ice - shake violently for 20 seconds then strain through the hawthorne strainer into a fine strainer and enjoy!

I think the vigorous shaking is the bit that does it.

I hate them myself but enjoy making them and getting a decent foam on too.

Nespresso straight into a mixer, ice cubes, kalua and vodka. Shake hard for five or ten seconds, and pour out with soemthing covering the top to stop the ice cubes falling in.

I think I have lost my touch slightly. I only had massive 2” square ice cubes.

50ml vodka
50ml kahlua
50ml Nespresso
Dash of sugar syrup.

Shake it until the metal shaker gets freezing cold

That was 50ml vodka/coffee/kahlua. No sugar syrup. Came out great.

Shake lots, plenty of ice and don’t forget to double strain. I use coffee patron, absolut vodka, sugar syrup and a nespresso shot. Always get a nice top layer, and always use the coffee cold and chilled in the fridge

50ml Absolut Vanilla
50ml Nespresso
Splash of sugar syrup

Bloody good shake up with plenty of ice

Strained through Hawthorne strainer
