I have returned from Greece with a Kilo or so of fresh olives from the villa I stayed at. They are the large ones and are half ripe, problem is Im not sure how to prepare them. One of the locals told me how to do it his way but I couldn't really understand what he was saying, and the internet searches talk about using caustic soda (bugger that) any body no what I need to do to remove the bitterness and how to cure them?
